1-1/4 cups sliced fresh mushrooms
1/2 cup finely chopped onion
1 teaspoon canola oil
2 cups water
1 can (15 ounces) pizza sauce
1 cup chopped pepperoni
1 cup chopped fresh tomatoes
1/2 cup cooked Italian sausage (or ground beef)
1/4 teaspoon Italian seasoning
1/4 cup grated Parmesan cheese
Shredded part-skim mozzarella cheese
In a large saucepan, saute mushrooms and onion in oil for 2-3 minutes or until tender. Add the water, pizza sauce, pepperoni, tomatoes, sausage and Italian seasoning. Bring to a boil over medium heat. Reduce heat; cover and simmer for 20 minutes, stirring occasionally.
Before serving, stir in Parmesan cheese. Garnish with mozzarella cheese. Yield: 4 servings.

Mac Chicken Cacciatore
1 7.25 oz pkg Kraft Macaroni & Cheese Dinner
1 6 oz pkg Oscar Mayer Deli Fresh Oven Roasted Chicken Breast Cuts
1 14.5 oz can Italian-style diced tomatoes, undrained
1/2 c chopped green peppers
Prepare dinner in large saucepan as directed on package.
Stir in remaining ingredients; cook on low heat 5 min. or until heated through, stirring occasionally.

Fudge-Filled Brownie Bars
Crust:
1 1/2 c all-purpose flour
3/4 c brown sugar
3/4 c butter, softened
1 egg yolk
3/4 tsp vanilla extract
Filling:
1 pkg fudge brownie mix (13x9 in pan size)
1 egg
1/3 c water
1/3 c vegetable oil
Grill the packets for 30 minutes or until cooked through.
Topping:
1 pkg (11 1/2 oz) milk chocolate chips, melted
3/4 c chopped walnuts, toasted
In a large bowl, combine the crust ingredients. Press onto the bottom of a greased 15x10x1 in. baking pan. Bake at 350F for 15-18 minutes or until golden brown.
Meanwhile, in a large bowl, combine the filling ingredients. Spread over hot crust. Bake for 15 minutes or until set. Cool on a wire rack for 30 minutes.
Spread melted chocolate over filling; sprinkle with walnuts. Cool completely. Cut into bars.

Grill Dinner Packets
BBQ Chicken Packet:
On sheets of aluminum foil, spray cooking spray, place chicken breasts and then diced potatoes on top and drizzle BBQ sauce over the top and fold the long sides up over the top together and then fold the sides inward to seal the packet. (Each packet should be an individual serving)
Corn on the cob:
On sheets of aluminum foil, spray cooking spray, place corn on the cob and then 1 TBS butter over the top, sprinkle with salt and pepper and seal the packet like above. (1 cob each packet)
Beets:
On sheets of aluminum foil, spray cooking spray, place beets and then 2 TBS butter over the top, sprinkle with salt and pepper and seal the packet like above. (6-8 beets each packet)
Grill the packets for 30 minutes or until cooked through.

All American Patty Melt
1 TBS butter
1 sm onion, sliced into thin rings
1 lb ground turkey or ground beef
cooking spray
8 slices sourdough bread
8 slices cheddar cheese
thin slices tomato
Melt the butter in skillet; cook onions until lightly browned; remove and set aside. Make ground meat into 4 patties and cook in skillet until browned and cooked through. In a separate skillet or griddle, spray cooking spray evenly over cooking surface, and put down 4 pieces of the bread. Place a slice of cheese on each bread, then the patty, the onion, the tomato, and another piece of cheese, then place another piece of bread on top of each sandwich. Lightly brown each side, just like a grilled cheese sandwich and serve warm.

1 lb ground beef
½ c chopped onion
2 cloves minced garlic
6 c meatless spaghetti sauce, divided
1 c pasta water, reserved from cooking ziti
8 oz pkg shredded mozzarella cheese
1 c grated parmesan cheese
Slightly undercook ziti, about 8 minutes. Drain; reserving 1 c of the pasta water, cover and set aside.
Preheat oven to 375F. In large skillet over medium heat, cook beef, onion, and garlic; stirring frequently 6-8 minutes or until beef is browned; drain excess fat. Stir in 5 c of spaghetti sauce and the reserved pasta water; reduce heat and simmer for 10 minutes.
Mix ziti into sauce mixture and stir well. Spoon half of the mixture into a greased 13x9 baking dish. Sprinkle with mozzarella cheese and ½ c parmesan cheese. Top with remaining ziti mixture, then remaining 1 c spaghetti sauce and sprinkle the remaining ½ parmesan cheese over the top. Bake 20-25 minutes or until heated through.
