Cajun Meatloaf

6 TBS margarine
4 TBS onion powder
1 tsp garlic salt
1 tsp black pepper
1 tsp Worcestershire sauce
1 tsp ground nutmeg
1 tsp cayenne pepper
ketchup (1/2 c for mixture, more for topping)
1/2 c milk
1 c breadcrumbs (I used Italian style)
1 lb lean ground beef
1 lb ground pork
3 eggs

Preheat oven to 400F. In a saucepan over medium heat melt margarine, once it is all melted stir in onion powder, garlic salt, black pepper, Worcestershire sauce, nutmeg, cayenne pepper and 1/2 c ketchup. Stir together and continue cooking for a few minutes stirring frequently. Remove from heat. Once mixture has cooled add 1/2 c milk. Stir until combined. Next add the breadcrumbs and stir; the mixture should be a thick paste. In a mixing bowl place the beef and pork. Whisk 3 eggs in a small bowl and then add into the meat mixture, combine with meat with your hands (ALWAYS remove rings first, haha!). Then add the pasty mixture into the meat as well working it together with your hands until it is completely combined and looks like meatloaf. Grease an 8x8 square pan (or whatever you want to use for a meatloaf) and place the meat mixture into the pan pressing it down until it covers the whole pan. Bake for 45 minutes and then add more ketchup to the top and sprinkle shredded cheese on top.
