Best Ever Apple Cake

3 c all-purpose flour
2 c sugar
2 tsp cinnamon
4 lg baking apples, peeled, cored, and sliced
1 TBS baking powder
1 tsp salt
4 lg eggs
1/2 c vegetable oil
1 stick butter, melted
1/4 c orange juice
2 tsp vanilla extract

Preheat oven to 350F. Spray bottom of baking pan (the recipe calls for a 10" tube pan, but I do not have that, so I just used a regular one I had).

In a large bowl, mix 2 TBS flour, 1/4 c sugar, and cinnamon. Add applies and toss to combine.

In another large bowl, mix remaining flour, remaining sugar, baking powder, and salt. Add eggs, oil, butter, orange juice, and vanilla extract. Beat until batter is smooth.

Pour half of the batter (about 2 c) into prepared pan. Top with half of apple mixture. Spoon remaining batter over apples and top with remaining apples.

Bake 1 hour 20 minutes or until a toothpick inserted in the center comes out clean. Mine burned around the edges, but it took the entire time to cook through the middle, but that is with a gas stove, so just watch it carefully.
